If you ordered a half or full steer/hog, the butcher will contact you to get the specifics on how you would like to have your all pastured beef or pastured pig butchered. The process is simple, and will only require you to answer the questions they ask. The beauty is you can specify how large you want your beef rounds to be, how much burger you want, or do you want specialty cuts of beef, and how thick do you want your steaks. It's even fine if you do not know what is best because the butcher can guide you with what most people prefer according to your usage.
The beef processing fees from the butcher are calculated on a per pound basis. The beef's weight is calculated after aging for seven days in the cooler. Not only will the aging make the beef more tender and flavorful, but it also lose moisture making the processing fees cost less.
